- Based on the same principle as the cream whippers, the siphons
can transform almost any mixture into foam liquid or semi-liquid,
sweet or salty, cold or hot; whether it is of purees, sauces, juices,
creams or broths. It's easy to use: the siphon is filled with the
mixture, the head is screwed on, it is loaded with N2O capsules
(nitrous oxide, harmless to humans), shaken, let it rest in the
refrigerator or in a water bath (to heat it) and it is ready to serve.
- Siphons allow a whole world of uses in the kitchen; You can get
creams and foams with a light texture and mild, both to
complement savory dishes (starters, garnishes) and for desserts.
