- In professional kitchens the mandolin is a work tool as common
as the knife. It is the ideal instrument for quickly cutting uniform
slices, allowing you to make perfect and varied cuts that are
impossible to make with a knife: very thin slices of vegetables,
vegetables or potatoes, fluted or latticed cuts, julienne or straw,
wavy, in sticks that greatly improve the presentation of a dish.
Mandolins usually include blades for grating (cheese, chocolate)
- Normally mandolins consist of two parts, a fixed base that
incorporates a blade (normally they include several
interchangeable types and with cutting thickness adjustment)
and a movable part where the food is placed; when sliding it, it
passes over the blade that makes the cut. For greater safety,
they usually include a hand guard.
- The Inox mandolin with a protector with rotating blades is made
of 18/10 stainless steel (an alloy with a higher resistance than
conventional steel) with a non-slip base.
- It has built-in rotating blades:
A julienne blade for 3 mm thick strips.
A 9 mm thick baton-cutting blade.
A wavy-type cutting blade for wavy cutting and waffle-type grid
cutting with adjustable cutting thickness between 0 and 9 mm.
A blade for cutting smooth slices with adjustable cutting
thickness between 0 - 3 - 6 and 9 mm.
