- In professional kitchens, the mandolin is a work tool as common
as the knife. It is the ideal instrument for quickly cutting uniform
slices, allowing you to make perfect and very varied cuts that are
impossible to make with a knife: very thin slices of vegetables,
greens or potatoes, fluted or latticed cuts, julienne or straw,
wavy, in sticks that greatly improve the presentation of a dish.
