- Although there are naturally carbonated waters, most
carbonated waters are produced by artificial carbonation.
- Carbonating or gasifying a drink is incorporating CO2 so that
when serving it releases the gas in the form of fine bubbles and
its effervescence produces a spicy sensation. This process uses
pressurized carbon dioxide before adding it to the water,
since the pressure increases the amount of CO2 that can be
dissolved; when opening the bottle the pressure is released, and
the carbon dioxide forms bubbles.
